This decadent breakfast is for one of those days where the gym isn’t on the schedule.. oh come on! It’s good to have a cheat day. With light fluffy cinnamon pancakes dowsed in a sweet warming chunky apple sauce, it is perfect for those cold winter days. If you want to know how to make it.. then keep on reading.
- 2 1/2 cups of plain flour
- 1 cup milk
- 2 tsp ground cinnamon
- 1/4 tsp salt
- 1 tsp of baking powder
- 1 cup water
- 1/2 cup sugar
- 2 small gala apples chopped to thick chunks
Firstly, start by mixing all of the dry ingredients of your pancake mix into a big mixing bowl and give it a good stir to incorporate all of the ingredients. Then, make a well in the middle of your mixing bowl and add the milk. Beat it with a whisk until the batter is nice and smooth and that there is no clumps of flour in the mix. Once you have obtained the required consistency cover with cling film and leave in the fridge (the cling film will stop a skin from forming)
While the pancake batter is in the fridge, we can get to work on the warm Apple sauce. Start by combining the water and sugar in a sauce pan and put it on a medium heat, it is important that you DO NOT STIR, but instead just use the pan handle to swish it around. Once you see vigorous bubbles forming but the sugar syrup is still clear add the chunks of Apple and leave on a medium heat until the apples are soft but not mushy, and the sauce is thick and like caramel.
While the apples are cooking away it’s time to make the pancakes. Take your pancakes out of the fridge and leave to the side. Heat up a large frying pan and add a knob of butter and make sure that the butter is distributed evenly. Then grab a ladle or a large spoon and add your pancake batter to the frying pan as you would.
Stack your pancakes on a plate and poke holes with a knife going all the way through the pancakes .Once you have achieved the desired outcome of your apples pour them carefully (IT IS VERY IMPORTANT THAT YOU DO NOT TOUCH THE SAUCE AS IT IS VERY HOT) over the pancakes, the liquid will start to seep through the holes of the pancakes and make it nice and heavenly and thick. Wait a few minutes for the sauce too cool down.
